Tea/Caffeine Correction

What a blessing that my Tea Consultant friend, Susan Teter, follows Everything Home! She sent me an e-mail this evening with a correction to some information I shared in the previous post.

Here is her e-mail, verbatum:

Hi Carol,
You'll have to run a correction. At the time you took the tea class the information about decaffing tea was what was being taught. However, a scientific study has since been done that proves that teaching to be untrue. It would actually take 6 minutes of steeping time to remove 80% of the caffeine and then you probably wouldn't want to drink the tasteless second infusion. However, a high quality oolong or green tea is perfect for multiple infusions which will lessen the caffeine content each infusion. (Dr. Bruce Branan, Professor of Chemistry, Asbury College, 2008) He also found that the highest concentration of caffeine is in the bud which is what the best white teas consist of, so white tea does not have the lowest amount of caffeine.
